About Mixing

So I have been baking for a really long time now, but I have always kept it simple. I don't have any fancy equipment that I use to get things done. No stand mixers or food processors. Just my spoons and whisks and paddles. I know this probably sounds really crazy, but I simply can't afford really fancy things at the moment, and I'm not going to stop baking because of it.

But lately I came to the realization that I don't even have the one less expensive tool that could help make things easier for me! I don't even have a hand mixer. This is the most obvious tool for any baker on a budget, but for some reason it seemed to have completely evaded my thoughts until now. So now I am on the hunt for a good heavy duty hand mixer. Something that will get the mixing done for me but something not overly expensive either, because let's face it, I'm not rich.

I found this sit that has reviews on the best hand mixers, so I'm hopeful that one of these will be good. I don't really have the time to go around researching every hand mixer that ever existed, so I'm sure one of these are going to handle the job just fine.

My favorite really quick dessert

I have a big family, and they all live nearby and like to drop by completely unexpected. At times like these, I have some quickie desserts that I can put together and share with the ones that I love. Here is one that my little nieces and nephews really love (and they love to help baking this as well).

Apple Oatmeal Crisp

You'll Need:
2 cans of Apple Pie Filling
1 cup of Golden Raisins
1  stick of butter at room temperature
1  cup of all purpose flour
1  cup of light brown sugar
1  cup of Oats
1 tablespoon of cinnamon
1 teaspoon of nutmeg

Prepare an 8x11 pan with grease and preheat the oven to 350 degrees. Mix together the pie filling and the raisins and pour them into the baking pan. some people are not crazy about raisins, so this can be skipped over.

In a separate bowl, mix together the butter, the flour, the sugar, the oats, the sugar, and the nutmeg. The mixture will be nice and crumbly. Spread this over the apple filling mixture.

Bake for about 30 minutes until crust is brown. Yum! This one is quick and delicious. It'll hit your apple pie craving with half the work required.

Chocolate Bundt Cake Recipe

I don't think that there is a single thing that I love in the world more than a chocolate cake. Sure I've had dozens of other desserts that I have loved, but when all is said and done, I always come back to the chocolate. Here's one of my favorite chocolate cake recipes.

Chocolate Bundt Cake

For the cake you'll need:
1 pack of chocolate devil's food cake mix
1 small pack of instant chocolate pudding mix
4 eggs
1 cup of milk
1-1/2 oz. Amaretto liqueur
1/2 cup of vegetable or canola oil
1 cup of semi sweet chocolate chips
1 cup of fresh raspberries (optional)

For the glaze you'll need:
1 stick of butter
3/4 cup of sugar
1/2 cup of Amaretto

First, preheat the oven to 325 degrees. Combine the first 6 of the cake ingredients and blend it all together well, then stir in the chocolate chips. Butter and flour your bundt pan and pour in the batter. Now you can bake your cake for about an hour. Stick a toothpick or a fork in until it comes out clean.

Now melt all of the glaze ingredients in the microwave or in a sauce pan. While the cake is still hot in the pan, pour most of the glaze over it and then let the cake sit in the pan for another 25 minutes. Next, remove the cake from the pan and pour the rest of the glaze on top.

Here's a neat addition for fruit lovers. If you hate fruit a ton, go ahead and skip this part, the cake will still be delicious. Since this is a bundt cake, there is a nice big space in the middle. Fill the middle space with raspberries. They taste great with the chocolate, and they make the cake look beautiful as well, which is perfect for serving to guests.
